NEBS Meat Cutting, Sausage and Curing Class @ Valley View Farm

NEBS pleased to offer a meat-cutting & sausage-making and curing class instructed by Matt LeClerc of Valley View Farm. Matt has taught meat-cutting, sausage-making and agriculture for many years. He will demonstrate how to break down and cut up a pig, and then each student will be allowed to cut up half a pig and make numerous styles of sausages. Students will also learn the basics of curing and smoking bacon, hams, sausage, etc. The cutting and breaking down of other meats and animals will also be addressed, depending on students’ questions. Class includes lunch as well as some meats to take home, so bring a cooler and ice.  Class size is very limited and classes will be assigned on a first-come, first-served basis so please sign up early.

Registration can be done by mail using the 2016 Meat-Cutting class application.  Online registration is pending.

KCBS Judging Class

NEBS is pleased to be hosting our annual KCBS judging class.  Students will participate in a hands-on class which will teach them the rules and regulations for KCBS judging by KCBS reps.

Registration is by mail only.  Please download the 2016 Barbecue Judging Class Application.
